Consumers generally assume that food purchased from grocery retailers or farmers’ markets is safe for consumption. Whether it is a packaged confectionery product or ingredients intended for meal preparation, there is an inherent expectation that these products have been manufactured, handled, and distributed in a manner that does not pose a risk to public health.

Food safety systems in Canada represent a critical, though often underrecognized, component of one of the country’s largest manufacturing sectors, including Manitoba’s food and beverage processing industry. As Tanguy Etoga, founder of NORMEX, states, “Food safety is not just about passing audits—it’s about protecting consumers, brands, and businesses.”
Food and beverage manufacturing is subject to stringent regulatory requirements prior to products being packaged and offered for sale. Frameworks such as HACCP programs, federal oversight through the Canadian Food Inspection Agency (CFIA), and provincial regulations collectively establish safeguards to minimize food safety risks and protect consumers.
The Spoiler Alert Food Safety Summit, presented by Food & Beverage Manitoba, convenes academic experts, Quality Assurance and Quality Control professionals, regulators, consultants, and industry innovators to highlight advancements within the food safety sector and strengthen collaboration across the industry.
According to Etoga, “Industry events create alignment. They bring regulators, consultants, and processors into the same room, which accelerates understanding and trust. Summits also expose businesses to practical tools and innovations they might not otherwise explore. When leaders share real case studies and lessons learned, it shortens the learning curve for everyone. That collective exchange is what moves standards forward.”
Choosing to contribute proactively to the evolution of food safety systems, Etoga applied his academic training in food science and practical experience in quality, sanitation, and operations to develop digital solutions such as NORMEX that simplify and automate preventive controls. “Today, my mission is to help small and mid-sized processors move from reactive compliance to proactive, data-driven management,” he says.
As a featured keynote at Spoiler Alert, he will focus on digital transformation in food safety. “I want to specifically show how technology can reduce administrative burden while strengthening preventive control systems. This includes giving a clearer understanding of where time is being lost in manual processes, plus providing practical examples of how automation improves traceability and accountability.”
He further notes, “In the end, there’s a roadmap for implementing digital tools without overwhelming their teams.”
Innovation continues to shape the future of food safety management for both emerging and established processors. According to Etoga, “In my mind, three areas stand out. You have data centralization and real-time monitoring through cloud platforms and IoT devices, AI-driven analysis to detect patterns and predict risks before they become non-conformities, and increasing regulatory expectations around documentation accuracy and traceability. Focusing on any of these would give processors a strategic advantage.”
However, the path forward presents ongoing challenges. As Etoga cautions, “A common misconception is that compliance equals safety. In reality, documentation alone does not guarantee control.” He adds, “The overlooked challenge is operational adoption. Many systems fail not because they are technically incorrect, but because they are too complex for daily use. Simplicity and usability are critical. If frontline teams don’t engage with the system, it won’t protect the business.”
